Creamy Wheat Porridge

Here we like to skip right to the point! Not write an entire book before you get to the recipe you came here for. So as much as I love the quiet of the house in the morning and the view as I prepare breakfast. I won’t go into a novel about how I light a candle, begin milling some einkorn berries, and while I wait I watch how the sewing machine in the corner slowly takes on a glow that grows brighter and brighter as the sun begins to rise and light up our little dining room. I’ll just tell you how the slow glow quietly and gently gets brighter yet is still so soft and reminds me that it is Autumn here at the homestead. You know “bouquets of sharpened pencils”. (Do you know what Im talking about? Does this quote make sense? Though we are not in NY). All this is just my way of saying… Fall mornings are my favorite. Fall mornings means gentle school mornings, crisp afternoon play times, and a new beginning of another precious school year. Though the cool air doesn’t last if the Texas heat decides to linger until winter. Then it is crisp quiet glowy mornings that turn into some summer like playtimes outside. Which we won’t complain about, too much.

Either way, I don’t want to write a book before the recipe… just painting a little picture of why those crisp autumn, quiet, homeschool mornings are always made even more special when this cozy, warming breakfast is on the table. No matter how much work is on the agenda, how cold the morning is, how long the day might be, this breakfast nourishes and prepares you for it all. One of our favorite ways to start our mornings is with a bowl of homemade "cream of wheat". It really is so creamy! We prefer to use freshly milled Einkorn berries. This heirloom grain, rich in nutrients and easy to digest, creates a porridge that is naturally sweet, nutty, and irresistibly smooth. Unlike processed cereals this one retains all the fiber, vitamins, and minerals that supports digestion, energy and overall well-being.Einkorns naturally high protein and lower gluten content make it a gentle choice for those sensitive to modern wheat, while its rich flavor and velvety yet hardy texture make each spoonful deeply satisfying.whther you use Einkorn or another preferred wheat berry, the homemade cream of wheat is a nourishing, wholesome, delicious way to start your day. Enjoy it simply with a pat of butter and drizzle of local raw honey, or customize it with your favorite toppings. some of our families faves are in the notes. Enjoy being nourished 🤍

Ingredients

  • 1 cup coarsely milled wheat berries (approximately 3/4 cup whole berries)
  • 3 cups water or whole milk (or milk f your choice- I most often do 1/2 water 1/2 milk)
  • 1/4 tsp celtic or real salt
  • 2 Tbsp butter ( we prefer) raw organic grass-fed
  • 1/4 cup honey or maple syrup, or favorite sweetener (optional)
  • 2 tsp-1tbsp vanilla (optional)

Instructions

  1. Add your water or milk of choice & salt to your pot. Bring to a boil over medium heat. Watch closely if you use milk it boils over easily. I use 1/2 water 1/2 milk most often. It makes it creamy but helps stretch your milk. I use all milk on days that I know it will be a while before we have a meal again or if we will be working outdoors for a long time.
  2. While that is coming to boil mill your wheat berries. This can take some playing with. You want the texture to be fairly coarse, somewhere between whole wheat flour and grits, depending on what your preference is.
  3. Once your flour is milled and your liquids are boiling turn down heat to medium/low and whisk in your flour a little at a time. This is important because it tends to clump. Once your flour is completely integrated add in your butter, honey or maple (leave out if you're making a savory version or if you want to have the toppings be the only sweetener to cut back on the sugar), add vanilla. Turn heat back up to medium/high and continue to whisk for 1-2 minutes and it will thicken nicely. Serve with butter and drizzle of honey- or your families favorite toppings. Notes

This is so delicious with just plain butter drizzle of milk or cream and maybe some honey, maple, or sprinkle of cinnamon sugar. Which is a couple of my kids favorite way. Here are some of our favorite suggestions. Always try to get organic or better than organic!

Sweeteners: honey, maple syrup, sucanat, brown sugar, sugar, date sugar, coconut sugar, date syrup.

Dairy - etc: butter, cream, half & half, whole milk, coconut milk, whipped cream, coconut cream, dollop of yogurt, drizzle of kefir, cream fresh, kefir cream

Fresh or dried fruits & nuts: peaches, berries, bananas, apples, cranberries, pecans, almonds, walnuts... or your favorites!

Jams & such: peach butter, pumpkin butter, apple butter or apple sauce, lemon curd, citrus zest, any jams or sauces.

Mix, match & enjoy!


For savory versions we enjoy some fresh chopped chives and or dill, butter, sour cream, creme fraiche, hollandaise sauce, or country gravy. Add protein with ground beef, sausage, bacon or salmon. Top with a yolky or jammy egg. Mix and match... skies the limit! We like to do this with grits as well.
