Better Butter-Swim Biscuits

In our true fashion, we’re not here to write a novel on the biscuits. Just want to let you know why we love them.

Let’s be honest—there are mornings when we rise with the sun, soaked our grains like good little homesteaders, and sip our coffee in a quiet house filled with the scent of beeswax candles and classical music.

And then there are the real mornings.

The ones where the kids are giggling like hyenas over the sheer delight of running around in pajamas evading the morning routine, someone forgot to soak the porridge grains, and your husband gently asks, “What’s for breakfast?”.

Enter: Better Butter Swim Biscuits.

We call them “better” because they are. Better than boxed. Better than drive-thru. Better than dry hockey pucks pretending to be biscuits. These beauties are fast, forgiving, and flexible enough to save the day—whether it's breakfast with jam, lunch as a sandwich with soup, or dinner beside a skillet of meat and greens.

Made with kefir (or buttermilk, or yogurt, depending on what’s fermenting in your fridge), and either freshly milled or organic flour, they’re soaked in butter before they ever hit the oven—because sometimes we all need to swim in a little grace. And a lot of fat-soluble vitamins.

No weird preservatives, no fuss, and no shame if you make them barefoot with a baby on your hip and a toddler sword-fighting with measuring spoons. Been there done that. These are just real food, real nourishment…

These are biscuits for real life. And real life is beautiful.

This versatile delicious biscuit recipe uses kefir, buttermilk, or yogurt- which ever you have on hand fermenting- along with wholesome flour, for a fast nourishing, preservative-free biscuit. Perfect for busy mornings, cozy dinners or just because- they are yummy.

Ingredients

Dough
  • 3 1/4 cups all purpose flour
  • 6 tsp baking powder
  • 6 tsp sugar
  • 3 tsp salt (1 if you use salted butter)
  • 3 cups cold Kefir (or buttermilk or yogurt. I most often use 2.5 cups kefir & 1/2 cup whole milk just cause that's how I roll.)
  • 1.5 sticks butter (12 Tablespoons)
Kitchen Tools
  • 1 Large cast iron skillet or 7x11 baking dish
  • 1 Silicone spatula or wooden spoon
  • 1 Mixing bowl, medium-large

Instructions

  1. preheat oven to 450° with baking dish or skillet in it.
  2. Add flour, baking soda, sugar & salt into a large bowl. Mix them together.
  3. Add butter into the oven dish that is preheated and allow to continue to preheat & melt butter. Keep an eye on the butter. You want it to melt- but not burn or brown.
  4. Add kefir (or kefir & milk combo, or buttermilk or yogurt. Whichever you prefer or have on hand) to the dry ingredients and stir and incorporate well. Let sit while the butter is melting.
  5. Once butter is melted in your large skillet, take our of the oven and pour the biscuit dough in. spread it our with your spatula our wood spoon, or whatever you are using, the silicone spatula or wood spoon are my favorites for the job. cover and slosh the butter around- don't be dainty- but don't burn yourself either. you want the butter to cover the biscuit dough! hence the name let them swim in that butter!
  6. Optional step we like to do- take your spatula or a butter coated knove and pre cut your biscuit dough. just slice it or cut it through to create the lines for butter to get in there and help them pull apart and make them easy to serve after they cook.
  7. bake in the oven for 20-25 minutes. Some people may find their dish or oven could take up to 30 minutes. Also depends where you live, so keep checking. You are looking for golden brown on the top. Serve and enjoy!

Notes

A delicious variation is to put 1/2 cup-1 cup of shredded cheddar cheese into the dough. along with some parsley or green onions, garlic or rosemary. These really are versatile and delicious!

Enjoy savory with some breakfast gravy, as a sandwich with sausage or bacon and egg. Or enjoy it sweet with some butter jam or pumpkin butter or strawberries and whipped cream for dessert!

However you make it enjoy being nourished with real biscuits for real life!
